Who doesnt like breakfast food? It is truly the best! Breakfast food can be made for any meal at any time of the day. It is usually easy to make as well! If you’re anything like me you will eat breakfast for lunch or dinner, delicious. These Easy Puff Pancakes were shared with me by a friend and are so good! They’re easy to make and most of the time you will have the ingredients already in the fridge or pantry. Our family has made these for breakfast, dinner, and snacks. These also heat up well for an easy breakfast throughout the week, and our toddler absolutely loves them!
Recipe Ingredients:
Butter – Use the butter to grease the pan. As you’re pre-heating the oven, place the pie pan into the oven with the butter. The butter will melt and grease the pan for you while the oven preheats.
Flour – I utilize Cup for Cup or Bob’s Red Mill flour, which allows for these to puff up the best. I also have used Namaste flour, which has great flavor but does not puff up as well.
Milk – Helps make the batter the right consistency to pour into the pie pans.
Eggs – This will help form the batter.
Vanilla – Adds a hint of vanilla flavor to the pancake.
Sugar – Brings out the right amount of sweetness.
Fruit – Utilize any fruit you’d like in the Puff Pancake to bring out different flavors. Make sure the fruit is fresh, firm and full of flavor. I typically use Blueberries & Strawberries.
Toppings:
Confectioners Sugar – Adds sweetness to the top.
Cinnamon – Gives it a french toast flavor.
Whipping Cream – Always adds the best flavor to the top.
Maple Syrup – Use whichever syrup you prefer, I always add real maple syrup.
Fruit – Brings out different flavors you’re looking for. Great way to get your fruits in for the day 🙂
Recipe Instructions:
- Preheat the oven to 425°, while the oven is preheating place the two 9-inch pie pans with the tablespoons of butter in the middle of the rack. This will help heat the pans and melt the butter.
- Mix the eggs, milk, sugar, flour, and vanilla in a big mixing bowl. I prefer to use my Kitchenaid Mixer or hand mixer for this. You will want to stir until well combined.
- Set the batter aside, while waiting for the butter to melt. Once the butter is melted in the oven remove the pans. Pour the batter into the two 9-inch pie pans. Then top with your fruit of choice or if you’d prefer plain, skip the fruit.
- Place the pan back into the oven and bake for 20 mins until golden brown. All ovens heat and bake differently, so watch the Puff Pancake, and once it is golden brown remove it from the oven.
- Serve your easy Puff Pancakes warm with toppings!
- These are so good!! Rarely do we ever have any leftovers, unless we plan for them! If you happen to have any Puff Pancakes left you can store the remaining for up to 4 days in an airtight container. To heat them up place them in an oven or microwave to enjoy throughout the week.

- Enjoy these easy Puff Pancakes throughout the week by making a dish or two ahead of time, while meal planning.
- Make these for a brunch with a variety of flavors. Strawberry, Peach, Cherry, Blueberry, Banana, Cinnamon & Sugar.
- If you do not have two 9-inch pie pans, you can use any other oven-safe pan of your choosing.
- The key step to this recipe is heating up the pan and butter in the oven, while the oven preheats and comes up to temperature.
Easy Puff Pancakes
Ingredients:
- 2 tbsp butter
- 1 cup milk
- 1 1/2 cup gluten-free flour
- 2 tbsp sugar
- 4 eggs
- 2 tsp vanilla
- 1/4 cup fruit of choice (add less or more to your liking)
Instructions:
- Preheat oven to 425°
- Place Two 9-inch pie pans with 1 TBSP of butter each in the oven's middle rack, while the oven is preheating.
- Mix together until well combined, eggs (beaten), milk, sugar, vanilla, and flour.
- Slice fruit into chunks as needed.
- Once the butter is melted remove the pans from the oven. Pour batter evenly between the two pans. Lay fruit evenly across the top.
- On the middle rack, bake for 20 mins or until golden brown.
- Serve with toppings of choice!
